Hmm ...
For movies, it's tough, but I would say Escaflowne: A Girl in Gaia is at the top for me. The fight between Dilandau and Van was so, so cool, even if the plot fell far short of the series. Paprika is also one to mention; it reused some of the same scenes, but it was definitely eye candy. Studio Ghibli movies always look wonderful as well -- Princess Mononoke in particular comes to mind.
For series, it's definitely Gankutsuou. The idea of putting patterns in was kind of odd, but it worked.

Wow, looks like we agree on your 1 and 3. I didn't like the story of Ergo Proxy but I was impressed by the graphics. And Real Mayer was a pretty cool character. Blood the Last Vampire - the fluid movements are awesome, plus I like the English-Japanese mixed language.

I agree with Escaflowne. For Studio Ghibli shows I think Mononoke is just as good as Spirited Away. Gankutsuou's graphic looked kinda weird to me.

Mushi-shi. If anime is a "style" it's too beautiful to be anime. Before I could buy it, I was watching it untranslated just to *look* at it.

My Beautiful Girl Mari easy. The story was like a Korean acid trip and the artwork and animation matched. Paprika is a far off second. Then maybe Voice of a Distant star.
